I am soooooo excited that we are finally sharing the recipe for our all-time favorite, fancy, most delicious breakfast recipe. Eggs Benedict is super popular and for a good reason. They are incredibly delicious. The combination of flavors and textures is out of this world. Yum, so tasty. The most important thing with eggs benedict is to choose the best possible ingredients if you want the best possible result. Take the time and make homemade English Muffins ahead of time; you can easily freeze them. Buy your favorite cooked ham and use the freshest eggs you can find. Also, making the hollandaise sauce at home makes all the difference, so we definitely encourage you to make it. ORIGIN

Eggs Benedict originates from one of our favorite cities: New York. When we were in New York last year, we wanted to order poached eggs in this famous restaurant called Prune, but they only serve them for brunch during the weekend. We were there for lunch during the week, so we had to order something else - it was delicious anyway. They serve it with a side of potato rosti, but other than that, the recipe is pretty similar.

Eggs Benedict is a delicious open sandwich that you can easily make at home. The sandwich is layered like this:

  2. A slice of cooked ham or prosciutto Cotto
  3. Poached eggs
  4. A generous amount of homemade hollandaise sauce
  5. Sprinkle of freshly chopped chives and black pepper

Can I poach the eggs ahead for Eggs Benedict?

Yes, and not just eggs. You can easily make hollandaise sauce and English muffins ahead of time too. Follow the link for more instructions. By doing that, you can be more organized, and your brunch or breakfast can be made with almost zero effort while still getting that fancy look that Eggs Benedict has.

Feel free to poach eggs ahead of time. Instead of poaching the eggs for 3 - 4 minutes, reduce the poaching time to 2 - 3 minutes. Carefully transfer them from boiling water to a bowl filled with ice-cold water, using a slotted spoon, to stop the cooking process. Then, transfer the ice-cold water with the eggs to the fridge. Keep them there until the next morning. Finish poaching the eggs by adding them to hot water (not boiling). There is no need to add vinegar or to create a whirlpool. Continue to cook them for 1 - 2 minutes, to get the heat through the eggs, while the egg yolk still remains runny.

Is the size of the eggs important?

Yes. If you are using small eggs, poach them for 2 - 3 minutes, and if you are using eggs size M or L, then poach them for 3 - 4 minutes.

Can I substitute cooked ham or prosciutto Cotto with anything else?

Yes. Use high-quality ham, baked prosciutto, or bacon instead of cooked ham or prosciutto Cotto.

What else can I add to Eggs Benedict?

Optionally add some spinach to your Eggs Benedict. Add a teaspoon of oil to a pan along with a handful of baby spinach. Cook for a minute, or until the spinach is just cooked, but not overcooked. Place the wilted spinach over the toasted English muffin, then continue layering the rest of the ingredients.

METHOD

  • hollandaise sauce

    First, make the hollandaise sauce. Our recipe is quick and straightforward, so simply follow the instructions, then poach the eggs.

    Individually crack four eggs into four individual small bowls. Fill a large pot or saucepan with 1 1/2 liter of water. Add the vinegar and bring to a boil, then immediately reduce the heat to a minimum to a bare simmer. Using a whisk, create a whirlpool, then carefully tip the first two eggs into the water. Cook for 3 - 4 minutes, stirring the water occasionally to prevent the eggs from sticking to the bottom of the pot. But be careful not to touch or stir the eggs. Remove the eggs carefully with a slotted spoon and transfer to a plate lined with a paper towel. Repeat the process with the remaining two eggs.

    Tip
    Optionally, check the temperature of the water before adding the eggs to the pot of simmering water. The temperature of the water should be 90 °C / 195 °F.
    Optionally trim off any wispy egg white pieces using kitchen scissors or a knife to ensure a prettier look.
  • Serve

    Cut two english muffins in half lengthwise and toast them in an oven, pan or toaster until they are golden brown. Divide between two plates. Place a slice of cooked ham or prosciutto Cotto over each half of the English muffin and carefully place the poached egg on top. Slightly season the egg with salt, then spoon the hollandaise sauce on top. Sprinkle with chopped chives and black pepper. Serve immediately.
